Unlike most Blanc de Noirs, this wine defies convention with a unique lemony-green colour due to minimal skin contact. On the nose, delicate floral aromas intertwine with hints of white peach and citrus zest. The wine’s creamy mid-palate structure is a result of post-fermentation lees contact, and the fruit flavours are beautifully balanced by a bright seam of acidity. A wine of finesse and complexity, with lingering flavours of sweet melon and crisp green apple that leaves a clean sensation on the palate.
Harvest Report 2020
A great year as vines recovered well following the drought of 2015 – 2018, and the subsequent smaller crop of 2019. The region also had better water supplies than during the previous season. An excellent season in terms of production and quality, with fantastic cultivar character and fuller-bodied wines in all varieties.
Verification
The grapes were handpicked at optimal ripeness, de-stalked and given a light crush. Fermented in stainless steel tanks with the aid of a specially selected yeast strain. Pumpovers of the fermenting juice over the cap of sinks took place at regular intervals to ensure the desired colour extraction. After fermentation, the wine was transferred to French aok barrels (30% new) for a 12-month maturation period. Matured for a further 12 months in bottle prior to its release.
