Bright yellow colour, with layered aromas of bees wax, burnt butter, brioche, bruised yellow apple and yellow citrus fruits. On the palate, the zippy citrus-like acidity creates a lively mouthfeel, and acts as the perfect foil for the integrated oak undertones and the vibrant fruit character. Flavours of stone fruits and nuts abound, while the freshness of the wine is its hallmark. The use of older oak adds a pleasing depth to the wine, while the finish has a persistent mineral and savoury character.
Harvest Report 2021
Harvest started later than normal due to unusually cool weather conditions throughout the season, which persisted throughout harvest time. Water resources were also replenished following the recent drought, which contributed to good vine growth, bunch numbers and berry sizes. This vintage produced wines with good colour extraction, low pH levels and high natural acidity.
Vinification
The grapes were handpicked at optimal ripeness, de-stalked and crushed before being sent to the press for a gentle pressing cycle to extract the purest juice. After overnight settling, the juice was inoculated with a specially selected yeast strain and fermented in stainless steel tanks at 15–17°C until dry. The wine was transferred to French oak barrels (30% new) for partial malolactic fermentation and a maturation period of 12 months, prior to filtering and bottling. Aged for a further 12 months in bottle prior to its release.
